Today I am sick. And it kinda sucks.
Yesterday morning I did nothing except read the book
The Ghost and the Goth. {I didn't think it was going to be very good, but I really did enjoy it!} There's a big window in my living room and as I laid on the couch all day I saw 16 PEOPLE run past my house. And only 1 car go by. Every time someone walked by, I would feel guilty for not taking advantage of the 60 degree weather and taking Roxanne on a walk. So around 3:30, I decided I was going to take her out.
The walk started out ok. The neighbors dogs are always in the front yard and they bark at anything that goes by, and Roxi really doesn't like that. She of course barked like crazy and wanted to go over to them, so I had to drag her away. Once we got into the woods, I let her off the leash and she was good. She kept running so far away, though, that I couldn't see her, and she usually stays pretty close. I kept getting scared that she was chasing elk or something and would just keep going! Every time I called her she would come running back, though.
When we were on our way back home, I put her on the leash again once we got to the road. As we were walking down the road, a kid on a longboard was riding up the hill. Roxanne HATES skateboards, and Vince and I don't understand why. She started going nuts and barking at the kid and jumping up and down and twirling around. I always have to hold her mouth closed or she just barks non-stop. Luckily the kid just laughed and kept on going.
As we got to the bottom of the long hill (probably a mile long) the kid came flying down on his skateboard. She freaked out again, but he passed pretty quickly. We were 2 houses away from home and there were like 4 dogs in a row, and since she was already crazy from the skateboarding, she just went wild. I ended up carrying her the rest of the way.
Then, right as I got home, I felt so sick.
Our friend Kyle was coming over for dinner, and luckily almost everything was done before I went on the walk. All I had to do was make the potato salad and eat! I didn't eat much, which sucked because I was cooking a pork loin in BBQ sauce all day to make BBQ pork sandwiches, which I love. There were leftovers, so I get to eat that today, but I'm craving the nachos that Vince and I ate the other night.
Here's my recipe:
Ultimate Nachos
Serving Size: 2-4
10 small corn tortillas, cut into triangles
1 can chili {I used Hormel with Beans}
1-2 cups cheddar cheese {any kind works}
4-5 pepperoncinis
1/2 cup green onion
1 large tomato
1/2 cup chopped lettuce
sour cream
vegetable oil
In a saute pan, heat oil on medium-high heat. Fry the tortilla chips until crispy, turning over half way through cooking. Set on paper towels after frying to soak up excess oil, and sprinkle with salt. Continue frying until all tortillas are cooked.
Layer the cooked chips into a metal or class pan {9x13} and sprinkle cheese between each layer. When all the chips are layered, sprinkle on the green onion, chili, pepperoncinis and a final layer of cheese.
Bake at 375 degrees until all the cheese is melted, about 10 minutes.
After taking it out of the oven, let it cool for a minute, then sprinkle with lettuce, tomatoes and sour cream.
Now, eat!
I think I'll have to make them again tonight.

Sorry you are feeling sick (brocoli and ice cream??? LOL)hoping you're better. The weather is doing the same here but only to the mid 40's--melted all the snow or turned it to ice! Sun feels good coming through the window and shining on my back as I try to get these cards finished--when did Christmas cards become a chore instead of fun?? Probably no white Christmas around here unless you head into the mountains! ♥U
ReplyDeleteI HATE when it melts snow and turns to ice! I'm so glad it's warm enough that everything is just muddy, not icy. I've been laying on my couch and the sun is shining on me as well =] I love it. I still need to make my Christmas cards, too! I only have my little brothers Christmas present, no one else's. Grr, I have tons to do hehe
