Hi, I used to go to elementary or middle school with you and I found your blog the other day when I was searching for a gluten-free recipe so I've been following it since then. I'm always excited to find someone else who can't eat gluten. I was wondering two things... first, where do you get your cream of rice?! I have been looking for it for FOREVER and I can never find it! Also, how do you make your buns? I just plop my dough on a pan but yours seem to be pretty round... how? =]

ReplyDeleteAnyways, I am ALWAYS excited to meet someone who is gluten free as well! It's fun to talk to them and see what they do and how they handle things.
I get my cream of rice from Fry's, of all places. It's with the cream of wheat and oatmeal {I think?}. Either way, it's at the end of an aisle haha I love it.
As for the buns, I use english muffin rings! I went to the Seasoned Kitchens store downtown and they didn't have any, but you can get them online. Here's the Amazon link: http://www.amazon.com/gp/offer-listing/B0001VQIHW/ref=dp_olp_new?ie=UTF8&condition=new I held off buying them for so long because I didn't want to spend a lot of money {It's good to have at least 12 rings} but after I got them I wished I had got them so much sooner! I usually make 13 muffins on the weekends and then freeze them and eat them throughout the week.
For a long time I used to use a recipe completely from scratch, but after a while I just stopped making bread because it was too inconvenient. I have a cousin{or something...} that is gluten free as well and owns a business and she actually sells a bread mix, and I use that now. It works perfectly with the muffin rings. What I've done is bought the big 25 lb bag because it makes it way cheaper, and then I put it in cans or bags to store it. It seems like a lot, but if you like it it's worth it for the convenience.
You live here in town, right? If you want, I can always give you some to try! I like being able to simplify peoples lives haha If you like it we could split the 25 lb bag in the future. =]

ReplyDeleteWe live in Prescott now and our Fry's doesn't seem to have the cream of rice =[ ...but recently I've been using Bob's Red Mill or Hodgson Mills for bread because I've had coupons for them and we like the taste... used to make Pamela's but it's pretty expensive and neither one of us is a huge fan of it. I will probably try the new mix you just sent me once I run out of coupons for the others and I will definitely be getting some of those english muffin rings... I even tried using a giant muffin pan but it didn't really work out for me.

ReplyDeleteThat sucks that Fry's doesn't have it! You can probably find it online if you really want it. I used to use Bob's mixes but they were to expensive for me and it was too...gritty? I'm not sure. I only tried it once or twice when I first went gluten free a couple years ago, so I should probably try it again. And coupons are a good idea for that. I like Pamela's chocolate cake mix but I follow the recipe on the side of the package for cookies, SO GOOD. It is way expensive though, you're right. It's a seldom splurge. =D
I like that the english muffin rings are so wide, as opposed to a giant muffin pan, but i used to use that as well.

Yay, got my English muffin rings and they work fabulously! Much better than hose clamps which is what I used after you told me about English muffin rings but I hadn't gotten them in the mail yet.
ReplyDeleteHose clamps have to be washed super super good because your mechanic husband pretty much never washes anything in the garage. Also, they have tiny slits in the side and the dough gets stuck in them thus making it difficult to pull buns out of them.

Haha hose clamps?! That's really creative. =] I used tuna cans for a while and just cut out the top and bottom, but they were too small. I would get like two bites out.
