Pretending it's summer.

Saturdays are now my only day off. I work Job #1 on Sundays, Job #2 Monday through Friday, and have classes Monday through Thursday. I'm only working part-time, but needless to say, I will really appreciate my Saturdays, especially after the first weeks of chaos that come with a new semester!

School started last Monday and I LOVE all my classes. Last semester I didn't have all good teachers and it made me kind of bummed about school. I was not as excited about things because none of the subjects were being taught in the greatest of ways. This semester, all my teachers are freaking outstanding. I have already learned so much and the way they all teach makes it stick in my brain! They love teaching and they love the subjects they are teaching. But, this week was still crazy and until I figure things out, like what to bring for quick lunches, where I want to study, and how to keep my house clean, things will be crazy. I'm taking this week to try and sort that stuff out, though, so hopefully everything will be running smoothly by the weekend.

Saturday I started my day off with a cup of tea, a can of coconut water, and an apple. I lounged on the couch, read some blogs, and read part of the book I'm reading for Sara's book club, Sarah's Key. So far I am in love with the book and don't want to put it down! I will definitely be finishing it by the end of the week.

Once I realized I was wasting away on the couch and was starving, I meandered into the kitchen to make some grain free/dairy free/paleo pancakes. I had to do some dishes first, so I got some strawberries out to snack on. I realized they would be much better a little sweeter and on top of pancakes, so I quickly diced two of them up and poured half a tablespoon of pure maple syrup on them to marinate while I did dishes.

I finished the dishes and started the pancakes, a recipe I had never tried before from Guilty Kitchen.

They turned out great!

They weren't sweet, so the added strawberries soaked in maple syrup and a spoonful of coconut fat were a perfect addition. The colors also scream summer to me, which I love.
The recipe made six 5-inch pancakes, but three were more than enough to fill me. Coconut flour is very high in fiber! Next time I'm going to double or triple the batch because the recipe says they freeze good.

Are you in school this semester and have a crazy schedule? Or just a crazy schedule in general?

  1. Ooh look at those! We've just had a butt-load of snow so I'm dreaming of summer ^_^ I like the addition of coconut, not only does it look pretty but I bet it tasted fantastic too!

    1. We've only got a couple of good storms this winter, it's just been soooo cold! Until the past couple days, the high has been 22 degrees and I've been driving to school in -9 degrees!

  2. These do look so summery! I actually just found a coconut flour pancake recipe yesterday I'm planning to make soon! I had gotten buckwheat flour for buckwheat pancakes but the coconut sounds better to me.
    I'm glad you're liking this semester so far and I'm glad you like Sarah's Key!

    1. I think the coconut ones taste better and are more filling! The buckwheat ones also taste more 'healthy', though I don't think they are much healthier than coconut?

    2. I just made the coconut ones for dinner you're right, very yummy! We had them with scrambled eggs with peppers & onion and bacon! =]

  3. Teachers always make a huuge difference in what I take away from a class. Especially with history. Those pancakes look so yummy! Strawberries are one of my favorite things to cook with :)

    1. I rarely do anything with strawberries except eat them in two seconds flat. They don't stay in my house very long! haha

  4. I feel ya on the whole figuring out a routine thing. Adding school to the mix really throws off my days! I'm loving it, though, and glad you are too. :)

    1. Fortunately this semester is way easier than my past few...I've been doing 17 each semester and this semester I only have 12! Whew, way easier! I'm glad you love it as well!

  6. WOW! those look incredible! beautiful pictures :] We've never tried coconut flour! How do you feel it compares to other gluten free flours? I like to hear it's high fiber.. we will try, pancakes are a staple in this house! Glad to hear your teachers are gooden's. That made all the difference for me in school! I'm in transition between jobs right now and schedules are strange, I like the way you are planning ahead. That's a must! Hope you have another great week!

      In comparison, I think it is tremendously better. I've made a sponge bread as well as banana muffins, and it holds together better than any GF combination I've tried! It's also full of fiber and healthier as opposed to rice flour which doesn't have much healthiness to it. Plus, you use a tiny amount, like 1/4-1/2 cup in any recipe. Do try the pancakes, they were good, and even good the next day!

  7. ugh this looks so freaking good. Swedish pancakes are basically crepes and since I'm on this LCHF diet I can't eat them anyway. I've been NEEDING something American lately....maybe I could try this, dunno if Sweden has coconut flour though. I sure hope so because my god I love coconut stuff. I can eat coconut oil by the spoonful. (Gross I know)

    Your work/school schedule stresses me out. Seriously. You're a total badass for taking all that on!!
